We like this recipe because The Fennel Countdown spice blend adds a delicious, fresh flavor that makes this chicken come alive.   • 2 large chicken breasts-halved lengthwise into 4 thin slices
  • ¾ cup gluten-free flour
  • ¾ cup gluten-free bread crumbs or panko
  • 1 tbsp The Fennel Countdown Fennel Citrus spice blend
  • 2 eggs, beaten
  • 1 tsp sea salt
  • ½ tsp black pepper

Directions

  1. Use 3 separate small rimmed plates or baking sheets (see video below)
  2. Add the flour, The Fennel Countdown, sea salt and pepper to the first plate and whisk together until the flour and spices are well combined.
  3. Add the egg to the second plate.
  4. Add the bread crumbs to the third plate.
  5. Pat dry each chicken breast slice and dip into the flour and coat both sides; dip the same piece of chicken into the egg and coat both sides; then transfer to the breadcrumbs and coat both sides. Repeat for the other 3 chicken breasts.
  6. Lay each slice directly in the air fryer. Spray with olive oil and air fry for 12 minutes turning halfway until the chicken is crispy.
  7. Remove from the air fryer and serve with our Fennel Citrus Salad.

There are so many ways to use my While My Za’atar Gently Weeps spice blend and on chicken leg quarters is one of my favorite. This recipe is an adaptation from Bon Appetit. It’s so flavorful and relatively simple. I like to add pomegranate seeds at the end to give it a pop of color (see photo below.) But I make small adjustments every time I make it.
